Recipe: How to make tasty dry fry or wet fry pork

Tired of eating beef, chicken or fish on a regular basis? Then why don't you try pork as an alternative.
Pork can make weeknight or weekend dinner a true event. These two finger licking recipes will leave you and your loved ones wanting some more of fried or wet fry pork.
Ingredients to cook wet fry pork
- 500g pork cubed
- 1 large onion finely chopped
- 2 cloves of garlic grated
- A bunch of coriander leaves
- 1 teaspoonful of oil
- 3 large tomatoes peeled and chopped
- Salt to taste
- Fresh Chili (OPTIONAL)
Procedure for preparing wet fry pork
- Wash and dry a clean sufuria or saucepan.
- Place the chopped pork in a Sufuria or saucepan and place on medium heat.
- Add a teaspoonful of cooking oil and fry the meat until it turns golden brown so as to get rid of any unpleasant taste brought by pork fat.
- Drain the excess oil into a container.
- Add the chopped onions and stir for 2 more minutes.
- Add the garlic and stir for another 2 minutes.
- Add the chopped tomatoes and stir forming a thick sauce.
- Add the salt
- Add fresh chili pepper chilies then a half cup of water.
- Reduce the heat and let it simmer for about 5 minutes or until the pork is tender enough according to your liking.
- Turn off the heat, add coriander and mix.
- Cover for two minutes then serve while hot.
- Wet Fry Pork can be served with Ugali /rice / mashed potatoes as accompaniment.
Ingredients to cook dry fry pork
- 500g Pork
- 2 Onions
- 2 Tomatoes
- 1 Tablespoon of garlic paste
- 1 Bunch Coriander (Dhania)
- Fresh chillies(optional)
- 1/8 Teaspoon Paprika
- 1 Teaspoon Black Pepper
- 1 Teaspoon Cumin
Procedure for preparing Dry fry pork
- Wash and dry a clean non-stick sufuria or saucepan.
- Clean and dice the pork.
- Add to saucepan and cook until the water has evaporated.
- On medium high heat, fry the pork, stirring occasionally.
- Add onions to the pork, fry until they are translucent.
- Add tomatoes and cook until softened.
- Add paprika, cumin, black pepper and salt and stir.
- Add the chillies and stir (optional)
- Add chopped coriander and mix.
- Stir fry the pork fry for a few minutes to infuse the ingredients and the fat from the pork. Pork has its own fat therefore you do not have to add any more oil.
- The cooking time should not be long owing to the fact pork is not a tough meat so avoid overcooking it.
- Rice/Ugali/Fried Potatoes and Creamed Spinach/Kachumbari can be served as accompaniment. Enjoy!
